Alongside arancini or canoli, sciaccia is a Sicilian staple. Basically it’s crispy pizza dough stuffed, calzone style, or folded and layered like a lasagne with cheese, tomato, potato or whatever you fancy really. Vittoria, Sicilian casalinga cook extraordinaire, showed us the basics.
